Fluffy Pancakes For Sunday Brunch Recipe
Vegan Protein Pancakes
2 tbsp Plant Protein Mix
1 ½ cups plant-based milk
½ cup oats
¼ cup unsweetened applesauce
2 tbsp maple syrup
2 tbsp melted coconut oil
1 tbsp flax seeds
1 tsp baking powder
Toppings (e.g., maple syrup, fruit, nuts, etc.)
Açai Berry Sauce
2 tsp Forever Beautiful Mix
1 cup plant-based yogurt
4 tbsp maple syrup
Blend all of the pancake ingredients in a high-speed blender until smooth.
Set the batter aside for a few minutes to let it thicken.
Heat a large skillet (if your skillet’s not non-stick, use coconut oil to grease it).
Spoon ¼ cup of the batter for each pancake onto the skillet.
Cook on both sides and repeat with the rest of the batter.
In a separate bowl, combine plant-based yogurt, maple syrup, and Forever Beautiful. Set aside.
Stack the pancakes up and drizzle sauce on top. Add berries or nuts for additional toppings!
